My local playgroup is trying to put together a cookbook to raise funds to purchase craft supplies and new toys for the kids (agec 0 - 4). We have about 30 families as members, we are non-profit organisation and we are affiliated with Playgroup Australia.
It would be awesome if you could all send me a copy of your favourtie recipes (tried and true) that I could send on to be added to the Gracemere Possums cookbook. Email me or post to this thread would be awesome!
C'mon guys help me out, I am a terrible cook, and I need all the help I can get!

Here is my latest creation
Tomato-less Beef Lasagne
60g butter
1/4 cup plain flour
450ml milk
9 dried lasagne sheets
1 cup grated cheese
1 tablespoon oil
1 leek, finely chopped
1 stick celery, finely chopped
2 garlic cloves, crushed
500g lean beef mince
1 1/2 cup chicken stock
1. Preheat oven to 180°C. Grease a 6cm deep, 29cm x 20cm (base) lasagne dish.
2. Heat oil in a heavy-based saucepan over medium heat. Add onion, celery and garlic. Cook for 3 minutes, or until tender. Add mince. Cook, stirring, for 5 minutes or until browned. Add stock, salt and pepper. Mix well.
3. Bring to the boil. Reduce heat to medium-low. Simmer, uncovered, for 35 to 45 minutes or until thick.
4. While meat sauce is cooking melt butter in a heavy-based saucepan over medium-high heat. Add flour. Cook, stirring, for 1 to 2 minutes, or until mixture is bubbling. Remove from heat. Slowly add milk, stirring until mixture is smooth. Return to heat. Cook, stirring, for 10 minutes or until mixture comes to the boil.
5. Spoon a little meat sauce into base of baking dish. Top with 3 sheets of pasta. Spoon over half the remaining meat sauce. Top with one-third of the white sauce. Spread evenly over meat sauce. Repeat pasta, meat sauce and white sauce layers. Top with final layer of pasta. Spoon remaining white sauce over pasta sheets. Spread evenly. Sprinkle with cheese.
6. Bake lasagne, uncovered, for 30 to 35 minutes, or until pasta is tender and top is golden. Stand for 10 minutes before serving.
This is a FAILSAFE recipe - see www.fedup.com.au for more details. This is not suitable for children during challenges.

I thought I'd add something that is low cost, tasty and gluten free (so many families these days have at least one member suffering from gluten intolerance, so this is a meal that can be enjoyed by everyone without having to cook something separate)
1 Tbsp oil
1 med. onion, chopped
1 stick celery, finely chopped
1 large carrot, finely chopped
1 tsp curry powder (gluten free)
500g jar tomato pasta sauce
2x 415g brown lentils
1 cup frozen peas
1kg potatoes, peeled (optional) and evenly chopped
1 Tbsp margarine (nuttelex for vegan)
1/2 cup milk (non dairy for vegan or lactose intolerance)
Heat oil in medium pot and saute onion, celery and carrot until soft.
Add curry powder and saute for one minute
Add pasta sauce, lentils and peas and bring to the boil. Reduce heat and simmer for 5 mins.
Place potatoes in a large saucepan and cover with hot water. Bring to boil, then reduce heat and simmer until tender. (This is more cost effective and quicker in a pressure cooker)
Drain potatoes, add margarine and milk. Mash until smooth.
Spoon lentil mixure into a large, oven proof dish, top with mashed potatoes.
Bake in a moderate oven, 180C, for 40 minutes.
